Colbine Tooke Buns

Ingredients

  • 200 g of Raw Tooke flour (RTF)
  • 100 g of Wheat flour
  • 6 g of Yeast
  • 15 g of Margarine
  • 10 g of Sultanas
  • 10 g of Almonds
  • 5 g of Red cherries
  • 2 Eggs (1 for glazing)
  • 150 ml of Warm water
  • 1 g of Food color
  • 50 g of Mango slices
  • 5g of Salt

Directions

  • Step 1 :Cream the yeast with warm water and cover with a warm damp cloth. Put in a warm place for 5 minutes for the yeast to grow.
  • Step 2 : In a clean bowl, sieve the flour and salt.
  • Step 3 : Put 1 and 2 into a dough blender, add margarine, food colour and mix well into a soft but not sticky dough. Remove and cover dough with a warm damp cloth and put in a warm place for 10– 15 minutes so as to allow dough to prove
  • Step 4 : Knock down the dough and knead lightly; make buns in shape of animals and put onto a greased baking sheet. Prove further for 5 minutes.
  • Step 5 :Put “ears” using almonds and “eyes” using sultanas.
  • Step 6 : Glaze the buns with whisked egg and bake in a hot
    oven for 15 – 20 minutes.
  • Step 7 : Remove buns from the oven and cool on a wire
    rack. Serve with soup.
